
Tarte Tatin

For 6 persons
Preparation time : 40 min
- 8 golden delicious apples, yellowed
- 1 roll of puff pastry (either bought or home-made)
- 2 sachets vanilla sugar, a bit of cinnamon
- 100g butter
- 100g icing sugar
Peel the 8 whole golden delicious apples. Cut them in half and remove the cores without cutting the halves. With a HEXAGON frying pan directly on the flame, melt the butter in the dish. Add the icing sugar to the dish, and lower the heat to make a caramel. Place the apples in a circle in the dish and put one or two in the middle.
Flatten with a spatula from time to time. The apples should be poached in the caramel, which should not turn black, but should be just golden. Scatter the vanilla sugar and cinnamon over the apples. Take it all off the heat and cover it with the puff pastry, pressing down on the sides.
Bake in the oven for 35 to 40 minutes. Serve warm.
