
Pineapple au gratin
For 4 persons

- ½ fresh pineapple
- 2 tablespoons of grated coconut
- 3 egg yolks
- 150 g single cream
- 80 g caster sugar (fine granulated)
- 1 sachet vanilla-flavoured
sugar
Preheat the oven grill to gas mark 7 (210°C).
Peel and core the pineapple.
Finely dice the pineapple flesh. In a bowl, mix together the sugar, vanilla-flavoured sugar, egg yolks, cream and coconut.
In small oven dishes (such as ramekins) arrange the diced pineapple and top with the coconut cream.
Place the ramekins on the oven shelve 2/3 of the way up in the oven, under the grill. The surface of the cream should brown.
Serve warm.
