
Onion and bacon pie
For 6 persons

Cooking time : 20 min + 30 min
- a disc of puff pastry
- 1 kg onions
- a little oil
- 1 x 20 cl pot crême fraîche
- 250 g diced bacon pieces
- salt & pepper
- grated cheese
Peel and thinly slice the onions. Heat the oil in a non-stick pan and gently fry the onions for approx. 20 mins (they should be transparent but not scorched). Don’t forget to season with salt.
When the onions are cooked (any water from the onions should have evaporated) add the crême fraîche and diced bacon pieces. Season with pepper. The onions should remain moist. If they are too dry, add a little crème fraîche.
Line a pie dish with the puff pastry. Fill with the preparation and sprinkle generously with grated cheese. Cook in oven at gas mark 6/7 (200°C) for 30 mins.
