Lemon Chicken

For 4 persons

  • 1 chicken 1.5 Kg / 3 lbs
  • 1 lemon
  • 50 g / 1,75 oz of clarified
  • butter
  • thyme
  • ground coriander
  • bay leaves
  • chopped shallots
  • salt and pepper

Pre-heat oven to 200°C (390°F). Baste the inside of the chicken with juice taken from a lemon, the ground coriander, shallot, thyme, bay leaves and salt and pepper. Put the chicken on the roaster and baste it with the clarified butter mixed with the rest of the lemon juice. Salt, pepper and sprinkle thyme over the chicken.

Cook in the oven for 10 minutes at 200°C (390°F), then 40 minutes at 180°C (360°F) depending on the size of the chicken. Baste the chicken occasionally with its drippings.
