
Duck with apple and spices

For 4 persons
- 1 duck
- 4 apples
- 100g / 3 ½ oz raisins
- 20g / ¾ oz walnuts
- olive oil
- 150g / 5 ¼ oz honey
- 1 cinnamon stick
- 1 star anise
- 1 tbsp coriander
- 1 tbsp red peppercorns
- 2 tbsp cider vinegar
- salt and pepper
Prepare the duck with salt and oil. Place it on the roaster. Cook in the oven for 50 minutes at 200°C (390°F) without pre-heating the oven.
Soak the raisins in the water. Boil up the honey and add all the spices. Remove from the heat and leave to infuse. Cut the apples into quarters. After the duck has been cooking for 50 minutes, remove the fat from the duck juice. Place the apples, walnuts and drained raisins in the bottom of the roaster. After 5 minutes, cover the duck with the honey and spices mixture. Add vinegar to the apples and leave the duck to caramelise for 10 minutes.
