
Chervil flavoured rib of beef

Cooking time : 20 min
- 2 x 900 g to 1 kg ribs of beef with bone
- 12 new potatoes
- thyme
- chervil
- parsley
- salt & pepper from the pepper mill
- olive oil
Preheat the oven to 210°C (gas mark 7).
Peel and cut the potatoes into small cubes. Place them in the dripping pan in the oven with the olive oil, salt, pepper and parsley and mix all ingredients together.
Lightly oil the oven grid shelf. Cover both sides of the rib of beef with thyme and chervil and position on the oiled oven grid shelf.
WARNING: do not season with salt or pepper!
Put the ribs of beef in the oven above the potatoes.
Leave to cook for 10 to 15 mins (depending on thickness) then turn and leave to cook for a further 10 mins.
Meanwhile, stir the potatoes. Season the meat with salt and pepper when cooked.
