
Basque chicken

For 6 persons

- 1 "Bresse" chicken (1,5 kg/ 31/2 Ib) cut into 8 pieces
- 700 g (1 112 Ib) green & red sweet peppers
- 1 kg (2.2 Ib) ripe tomatoes
- 3 yellow onions
- 3 cloves of garlic
- 1 glass of dry white wine
- 1 small glass of peanut oil
- 1 bouquet garni
- salt and ground blaek pepper
Warm half of the peanut oil in a cocotte, then brown the finely chopped on ions, the pressed garlic and the peppers cut into strips, their pips al ready removed. Leave to cook for approx. 5 min.
Blanch the tomatoes, skin them and chop them into pieces, then add to the peppers. Season and cover, leave to simmer for approx. 20 min .
Heat the remainder of the peanut oil in a cocotte, then add the seasoned chicken pieces, deglaze with white wine and add to the vegetables in the cocotte, together with the bouquet garni. Cover and allow to cook for 30 min.
This dish may be accompanied by pilaf rice.
